Use the surface where food sits
A wider rim can come from more sloping walls rather than more flat cooking room. The table keeps nominal size, rim and flat cooking diameter separate. Match the bottom to the cooktop before choosing a larger rim.
Estimate liquid portions from capacity using your own fill level, or measure a pan you already own. Height is not substituted for interior depth.

Does the advertised diameter describe the cooking surface?
Not necessarily. The rim and flat cooking surface are different measurements. A missing flat diameter stays unknown.
Are the serving estimates guaranteed?
No. They are arithmetic using your chosen volume and portion. Food shape, cooking method and working room change what fits.
